Weekend Indulgence


One of my favorite parts about Saturday morning is having time to make us a sweet breakfast concoction that lasts through the weekend and beyond.  A lot of times I take the lazy route and buy something from Immaculate Baking Co. but have recently vowed to start making my own tasty treats.  Today I made a version of these delicious Cinnamon-Sugar Crusted Coffee Cake Muffins from my favorite food blog, Can You Stay for Dinner?  I have loved every recipe off of her blog.  I made a few small changes.  However be warned they really do taste like you’re eating a donut!

Mini Coffee Cake Muffins (from Can you Stay for Dinner?)

(makes 12)

  • 1-¾ cup flour
  • 1-½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon nutmeg
  • ½ teaspoon cinnamon
  • ⅓ cup oil
  • ¾ cup granulated sugar
  • 1 egg
  • ¾ cup milk
  • Nonstick cooking spray(I used my spray can with oil)

For the Cinnamon Sugar Topping:

  • 1/2 cup butter, melted
  • 2/3 cup granulated sugar
  • 2 tablespoons cinnamon

Preheat the oven to 350º. Whisk together the flour, baking powder, salt, nutmeg, and cinnamon.  In a separate, large bowl, combine oil, sugar, egg and milk.  Add dry ingredients and stir only to combine.  Coat your muffin pan well with nonstick cooking spray and divide the batter evenly among the cups.  Bake at 350 degrees for 15-20 minutes.  Run a knife around the sides of the muffin and shake them out of the pan while still hot.  Melt the butter in a bowl.   Combine the white sugar with the cinnamon in another bowl.  Dip muffins in butter, then into the sugar/cinnamon mix. Let cool.  Enjoy!

While they turned out almost perfect for me I have a few tips to pass along.  Make sure you coat the cups in your muffin pan very well.  I would also not use the baking stone pan again.  I always forget muffins/cupcakes stick more.  Use a good dark-coated non-stick pan.  Lastly I doubled the amount for the cinnamon sugar topping.  I only had enough for 7 muffins.  I may just like things well buttered and sugar-coated. 🙂  Either way to fully coat all 12 I would have needed to double the batch.  Even without the topping they still taste delicious.  I’m off to enjoy a muffin (okay maybe 2) and catch up on my Google Reader.  Have a fabulous weekend!
